Can someone explain what the criteria is for defeating other villages because it's clearly not superior numbers. Am I missing something? I just lost 7 spear men attacking a derelict village that contained only 3.

Did you factor in the wall, or the fact that each village has basic defense? Those factors also contribute to how you defeat other villages. Superior numbers is one criteria, but the numbers have to be sufficient to override some other defender pluses.

spears are defensive troops, so they are more powerful in defense than offense. There are many factors that affect the outcome. Spears are powerful defending against cavalry for instance, but will be wiped out by infantry. The opposite is true for swords who can hold off infantry but will be over-run by cavalry. The wall, basic defence, and luck also play a part.
